  • For house pours spirits, or bottles that are often used, attacha speed pourer.Similar to pouring without a speed pourer, confidence is key, but you’ll hold the bottle differently on the neck (see next page).
  • For bottles without a speed pourer, holdthe bottom thirdof the bottle’s body (label facing the guest), with an extended wrist. If you are confident, you can hold the cap/cork in the pouring hand (as pictured).
  • Be steady with your jigger hand (holding it between your thumb and index finger, or positioned between your index and middle finger). To improve your style, you can always practice with a jigger, and a bottle filled with water.
  • Get the jigger placement right – understand the arc of the flow, and keep itclose to the shaker or glassinto which you’re emptying the jigger. That way, it is a simple tipping motion to pour the measured ingredient into the vessel.
  • Be confident, but gentle,in your actions to avoid drips.
