For house pours spirits, or bottles that are often used, attacha speed pourer.Similar to pouring without a speed pourer, confidence is key, but you’ll hold the bottle differently on the neck (see next page).
For bottles without a speed pourer, holdthe bottom thirdof the bottle’s body (label facing the guest), with an extended wrist. If you are confident, you can hold the cap/cork in the pouring hand (as pictured).
Be steady with your jigger hand (holding it between your thumb and index finger, or positioned between your index and middle finger). To improve your style, you can always practice with a jigger, and a bottle filled with water.
Get the jigger placement right – understand the arc of the flow, and keep itclose to the shaker or glassinto which you’re emptying the jigger. That way, it is a simple tipping motion to pour the measured ingredient into the vessel.
Be confident, but gentle,in your actions to avoid drips.
