  • Spirit: High alcohol beverage, usually above 37.5% abv, but can be bottled as high as 60% abv, or occasionally even higher. The higher alcoholic strength is achieved through distillation of a fermented beverage.
  • Continuous distillation: Distillation using a column still – which allows low-alcohol fermented wash to be pumped in continuously. This means high-alcohol spirit can be produced faster and more efficiently (as opposed to pot distillation, in which the liquid is distilled in batches). Column stills also produce higher alcohol, purer distillate – the perfect base for neutral spirits such as vodka.
